Anyone got any good recipes? (Well it is "And now for something completely different"). I may be involved in a bake - off for Monday and thought that there were plenty of people on this forum who may have a good cake or biscuit recipe they could share with me.

I'm thinking gingerbread cos I havent had any of that for ages

Help me out a little here

Yes, its like my baking is better than yours, prove it, well ok then bring in baked goods on Monday and everyone can test, ok, get home, dont actually have any recipes

Ah well you're not helping. I guess I'm going to have to put a puppy in a backpack and take it down the park, see if I get any attention that way

SAVE THAT PUPPY

GREEK HONEY, WALNUT & BRANDY CAKE

125 ml good quality olive oil
100 gr caster sugar
2 medium eggs
200 gr walnut pieces
185 gr self raising flous sieved
quarter tsp salt
125 plain greek yoghurt (if 150 ml pot doesn't matter)
2 tablespoons brandy (metaxa is best but any will do)
2 tablespoons of clear honey
20 cm round loose based cake tin oiled and base lined

Put oil sugar and eggs in large bowl and whisk with electric beater til smooth
Save handful of walnuts for decoration and chop rest finely with knife or food processor until fine but not mealy

Add chopped walnuts, flour, salt and yoghurt to the oil mix. Mix using wooden spoon using broad strokes - don't over mix.

Spoon mixture into prepared cake tin nad smooth top flat, decorate with reserved nuts

Bake in preheated oven 175 C Gas 3.5 for 40 minutes. Test by inserting skewer at angle into centre should come out clean. Take out of oven but leave in tin

Mix brandy and honey in small jug (helps to warm very slightly in microwave) Trickle this mixture over the cake and leave to cool in tin for 20 minutes.

Remove cake on loose metal base and cool on wire rack for 10 minutes.
Remove metal base, peel off paper and leave to cool entirely.

If you want you can eat warm with Greek yoghurt as a pudding.

Delicious either way.

Hmm all I do for mini cup cakes is sugar, flour, eggs all mashed together add some currents or whatever then pour into cupcake things and cook.

Dunno if this counts as backing buy pizza parcel...
Roll out some puff pastery, put pizza base (tomato and herb type saurce/puree) in middle of pastery, sprinkle some cheese on then other toppings of choise then sprinkle more cheese on top.

Now you can either cook like that or fold pastery over like a pasty and seal around edge and cook Very Happy
